Entry to the complex is via guarded securitygates. For safety reasons as well as due to the layout of the business complex, all tenants share a singleloading and receiving dock. This dock is operated by the complex management. This means that all deliveries come to the loading and delivery dock. The dock employees checkquantities against delivery slips and outer boxes for damage. Then they coordinate the delivery tothe businesses within the complex via service laneways that trucks cannot access. The loading and delivery dock is equipped with cool rooms and refrigerators to store stocks until thestock is delivered internally within the complex. When a delivery arrives and it is ready to be delivered, the loading and delivery dock employeescontact the business to notify them that they have items for them being held at the dock. The ordering method used by The Naja Group of Colleges is to order items in batches. That is, forexample, one batch of tuna is set to be four (4) boxes each containing 12 cans. The reorder pointsare set at half batches. Which means when your stock level reaches two (2) boxes, you are to placean order for one (1) batch of tuna, with half a batch being a safe amount to have on hand until thedelivery arrives. Once the new order arrives you rotate the items so that you use the older batchesfirst. The Naja Group of Colleges have provided you with the batch details for each item you use in yourcafeteria – ( See “Item Details” sheet in the “NGC Campus Cafeteria Inventory” Excel Workbook tobe provided to you by your Trainer / Assessor.)Apex Institute of Education | SITXINV001 – Learner Assessment Pack V2.0_Jun 2019 | CRICOS: 03156M Page 20 of 31PART 1: ROLE PLAY – STOCK COUNTUndertake a role playFor this task, you are to perform a spot check of current stock on hand according to organisationalcodes, policies and procedures. You are Rhiju Singh, the head chef and shift supervisor at The Naja Group of Colleges’ North SydneyCampus Cafeteria.Stock taking is the counting of on-hand inventory.
