Alejandro is a 12-year-old Hispanic male who lives with both of his parents in Dallas, TX. Alejandro’s father works full time in construction and his mother stays home and takes care of him and his two younger sisters. His mother saves hundreds of dollars a month by “couponing” and she stocks their freezer with frozen pizzas, burritos, microwave dinners and other convenience foods. The pantry is well-stocked with drinks and snacks. The kids have these convenience foods for lunch and after-school snacks.
For dinner, Alejandro’s mother cooks homemade meals that include refried beans, various cheeses, fried fish, chips and guacamole, and homemade tortillas, all made with ingredients she buys at the local Hispanic market. Alejandro’s mother speaks little/no English, but the kids translate for her as needed. Alejandro’s main hobby is playing video games. He will make several trips to the kitchen during his gaming session to stock up on chips, Gatorade, and Uncrustables. On weekends the family enjoys watching and rooting for their favorite soccer teams, whether on T.V. or at the soccer stadium when they can get tickets.
A recent trip to the pediatrician for a well-child visit caught Alejandro’s mother off-guard when she found out her son had fatty liver, was overweight, and was pre-diabetic.
